El proyecto ha sido seleccionado en un certamen europeo y busca fondos mediante ‘crowdfunding’. Si es de los diez con más apoyo logrará 100.000 € para lanzar el dispositivo que informa en tiempo real.
Un pequeño dispositivo que con solo acercarlo a una comida es capaz de detectar a tiempo real los alérgenos que contienen esos alimentos. Así funciona el sistema ideado por tres empresas extremeñas del Parque Científico y Tecnológico y una investigadora de la Universidad de Extremadura (UEx), con el que se busca mejorar la calidad de vida y la salud de las personas que padecen alergias a determinados alimentos. Pero además también podría ser de utilidad para los controles de calidad en las industrias alimentarias e incluso para el sector de la hostelería y la restauración.
El proyecto de este grupo extremeño ha sido seleccionado entre más de cien propuestas en un concurso europeo de impulso a proyectos innovadores enmarcado en el Programa Horizonte 2020 y está en la fase final. En total hay 58 seleccionados de toda Europa pero solo diez conseguirán el premio final: 100.000 euros para poder desarrollar la iniciativa. Para conseguir ese objetivo, los proyectos necesitan apoyo económico a través de la fórmula de crowdfunding o microdonación. Las ideas que consigan una mayor recaudación en esta campaña serán finalmente las elegidas. Hay hasta el próximo 31 de diciembre para contribuir, a través de la web del programa Katana (https://katanareward.opencircleproject.com), al único proyecto extremeño seleccionado, denominado Rumor Allergies in Food. Se pueden donar entre 20 y 200 euros.
«No hay que olvidar que una alergia alimentaria puede costar la vida a una persona y este sistema redunda en beneficio de este sector», explica María Victoria Gil, presidenta de la Asociación Extremeña de Alérgicos a Alimentos. Pero además, Gil es investigadora del Grupo Química Orgánica de la UEx y una parte del consorcio que está trabajando en este novedoso sistema. «En la universidad estamos realizando estudios de modificación de proteínas para ser menos alergénicas y hemos empezado con las lácteas por ser un alimento básico», explica la investigadora.
Junto a ella, conforman el consorcio tres empresas ubicadas en el parque científico de Badajoz, que ya han colaborado en otros proyectos conjuntos y que se encargan del desarrollo tecnológico de este sistema: son BioBee Technologies, Gnuo Consultores y CreativeQuality. «Será un pequeño dispositivo electrónico basado en la microelectrónica, que va a ser capaz de distinguir la presencia o no de alérgenos en los alimentos», señala Javier Ramos, responsable de BioBee Technologies.
De momento, el consorcio trabaja con la base de un prototito con el que ya se han hecho las pruebas de concepto. «Ahora con el apoyo que esperamos obtener en esta convocatoria europea de microdonaciones la idea es ir ya a una producción de un dispositivo final. Si además el proyecto logra los 100.000 euros del certamen, podríamos seguir con el escalado, el desarrollo definitivo y la puesta en fabricación en serie del sistema», prosigue Ramos. El dispositivo podría estar en el mercado en un plazo de entre nueve y doce meses.
LAS PROTEÍNAS LÁCTEAS / Por ahora se trabaja con las proteínas lácteas, pero podría extenderse a otro tipo de alimentos que puedan conllevar riesgo implícito. «El sistema se basará en las propiedades eléctricas de las proteínas, porque los alérgenos son proteínas y en el caso de la leche hay tres o cuatro, como las caseínas fundamentalmente, las responsables de las alergias alimentarias», explica la investigadora de la universidad extremeña.
«Las alergias a los alimentos son una seria y potencial amenaza para la vida y afectan a millones de personas en el mundo». De hecho, la Organización Mundial de la Alergia (WAO, por sus siglas en inglés) considera esta patología como un problema que no dejará de crecer en los próximos años, ya que puede aparecer en cualquier momento de la vida. «Cada tres minutos alguien va al hospital por una reacción seria».

Como no existe cura para estas alergias, la única forma de no tener problemas es evitar los alimentos que los provocan.
Por ello, detectar esos alérgenos y ofrecer seguridad y garantías a las personas afectadas y a la industria alimentaria es vital, y esa es la función principal de este sistema ideado por este grupo de extremeños. Aunque reconocen que hay algunas aplicaciones informáticas que ayudan a la lectura del etiquetado de ciertos alimentos, «no existe en estos momento una metodología o técnica que solvente esta problemática»
